Job Description

We are seeking a dynamic and experienced Group Executive Chef to lead and manage the culinary operations across five bush-based kitchens in Botswana. The ideal candidate will have a passion for creating unique, high-quality dishes while working with limited resources, ensuring adherence to budgets, and using locally sourced ingredients. This role requires a hands-on, practical chef with exceptional leadership skills, a deep commitment to sustainability, and the ability to collaborate with local communities.

Key Responsibilities:

  • Oversee and manage culinary operations for five kitchens across remote, bush-based locations.
  • Develop and implement creative, adaptive menus with limited stocks and local produce.
  • Collaborate with local communities, businesses, and suppliers to source ingredients sustainably.
  • Tram and mentor local kitchen staff to maintain high culinary standards and practices.
  • Maintain strict adherence to budgetary constraints, ensuring cost-effective kitchen operations.
  • Stay current with culinary trends and incorporate future food trends into menu development.
  • Ensure compliance with health and safety regulations, maintaininga dean and safe kitchen environment.
  • Lead by example, promoting a positive, passionate, and loyal working atmosphere.
  • Create exceptional dining experiences that showcase local Flavors and ingredients, tailored to the bush setting.
  • Implement and manage food ordering, inventory control, and kitchen staff schedules.

Requirements;

  • A minimum of 10 years of experience as a chef, with at least 5 years in a leadership role.
  • Proven experience working in remote or bush-based environments.
  • Strong organizational skills with the ability to manage multiple kitchens simultaneously.
  • Excellent budget management and cost control skills.
  • Ability to adapt quickly to changing conditions and limited produce availability. Passion for sustainability and working with local communities.
  • Up-to-date knowledge of global culinary trends and a forward-thinking approach to future food concepts.
  • Strong communication skills and the ability to train, mentor, and lead a diverse team.
  • Must be energetic, passionate, creative, and hands-on, with a strong work ethic and sober habits.
