LOCATION: Jacks Camp, Makgadikgadi Pans (CT11)
Operating within the tourism industry for over three decades now, Uncharted Africa Safari co. owns and oper­ates award winning Safari Camps in Botswana.
UASCo is currently seeking for a highly experienced individual to join its team. The successful candidate will be committed, well-organized and not afraid of a challenge.
Reporting to the Lodge General Managers, the Executive Chef will be responsible for the preparation and deliv­ery of all meals and management of the kitchen – either directly or in an advisory capacity – and for all staff in his/her department

Core Responsibilities:

⦁ Supervision and coaching of all kitchen staff; ensuring that high kitchen and personal hygiene are maintained by all staff.
⦁ Ensuring that the food prepared is consistently of top quality and that special dietary requirements are always met.
⦁ Monitoring the quality and quantity of stock ordered and received.
⦁ Management of the menu in conjunction with the Food & Beverage Manager.
⦁ Management and control of costs by ensuring that wastage is kept minimal and monitoring of breakages.
⦁ Training and Development; identifying areas of training and development and ensuring that they are met.
⦁ Management of all kitchen assets and equipment.

Minimum Requirements:

⦁ Diploma in Culinary Arts
⦁ At least eight (8) years of quality food preparation and kitchen management in a 5 star environment
⦁ Valid Food handlers’ certificate
