Job Description

Cresta Marakanelo Limited operates 11 hotels in Botswana with the Head Office based in Gaborone.
Applications are invited from suitably qualified, experienced and results orientated candidates for the position of Executive Chef.

SCOPE OF WORK
We are looking to hire a commendable Executive Chef to manage our kitchen staff and to resolve kitchen issues swiftly. The executive chef attracts and retains staff, maintains a cooperative relationship with team members and optimizes staff productivity. You will train staff to use new recipes, cooking techniques and equipment, and oversee cooks performing food preparation. You will oversee the delivery of food supplies, prepare special dishes, and supervise overall kitchen operations.

ROLESAND RESPONSIBILITIES
• Manage and control all food outlets in the hotel in accordance with the established standard operating procedures.
• Ensure food meets quality standards and in keeping with guest expectations and culinary trends.
• Effective cost control and maximization of profit.
• Ensures that high standards of sanitation, cleanliness and safety are always maintained throughout all kitchen areas. Attain benchmark results from the regular FCS Hygiene Audits.
• Manage the performance of the kitchen by setting and achieving all budgets with specific attention to maximization of gross profit.
• Comply with Local Authority guidelines for running a kitchen.
• Mentor, train, and develop the brigade.

QUALIFICATIONS AND EXPERIENCE
• Diploma or bachelor’s degree in the culinary arts or equivalent.
• Minimum 5 years of experience in managing, planning, and operating a food service establishment in a three to five-star hotel.

COMPETENCIES
• Proven experience as an Executive Chef in a similar leadership role.
• Profound knowledge of traditional, modern, and international food preparations
• Creative flair and passion for culinary innovation.
• Ability to thrive in a fast-paced environment and handle pressure.
• Good communication skills
• High level of interpersonal skills
